第1巻では、ディヤン・スジック（Deyan Sudjic）が、倉俣の生涯と仕事を彼が生きた日本の激動の時代を背景に解説。豊富な作品写真とともに、未公開であったスケッチやドローイング、図面を多数収録し、その詩的で思慮深い思考の源泉を紐解きます。60年代から80年代の記事を中心に倉俣自身の貴重なインタビューや文章も掲載されており、その多くは日本の雑誌等からのもので、原文の日本語と英訳テキストの両方で読むことができます。

あわせて作者が書き下ろした序文と、幕間のように差し込まれた詩的なテキストが、このレストランの初期やキッチンでのインスピレーション、そしてのちにコペンハーゲンで最も名の知れたレストランの一つとなった裏話を垣間見せます。編集は、デザイン、インテリア、建築、食にまつわる編集や執筆を手がけるジェニ・ポーター（Jeni Porter）が担当、写真はフォトグラファーのラスマス・ウェン・カールセン（Rasmus Weng Karlsen）が撮影。
