Angel AM-1 Whiskey YeastAngel's AM 1 yeast is best suited for whiskey fermentation. It gives a softer, fuller mouthfeel and complex slightly fruity esters. Importantly for distillers, the yeast cells tend not to give adverse effects when boiled. This means the wash does not need to be clear going into the still. In our opinion, this is well suited when trying to create a scotch style single malt. It's also great at adding interesting complexity to other styles of whiskey
